Verjus (French for ‘green juice’) offers a refreshing, non-alcoholic taste of the SCRIBE Estate.
We harvest our Estate Pinot Noir halfway through veraison, at the peak of summer freshness, before it has accumulated much sugar or color, then cold-press and bottle the juice.
A unique and versatile SCRIBE staple for nine vintages – we use it in place of citrus juice or vinegar for nuanced acidity in the Hacienda Vinaigrette. Even more so, we enjoy it simply in a Verjus Spritz, over ice with a splash of sparkling water – a piquant and unexpected ode to the summer harvest season.
