Pleasantly tart and delicately floral, Verjus (French for 'green juice') is a non-alcoholic press of our Estate Pinot Noir.
We harvested this fruit halfway through veraison before it accumulated much sugar, then cold-pressed and bottled the juice.
We usually drink it in a wine glass with ice and a spritz of sparkling water, but it's also a unique and versatile kitchen and cocktail essential. Use it in place of citrus juice or vinegar for nuanced acidity - it's the secret ingredient in the Hacienda Vinaigrette and Shrub Spritz.
