Years ago we experienced the vibrancy of fresh pressed olio nuovo while traveling in Italy, and upon our return planted the four great Tuscan varieties of olive trees (Coratina, Frantoio, Leccino, Pendolino) here on the SCRIBE farm.
After we picked the last of our grapes, we harvested, pressed and bottled our small but precious 2024 olive crop.
The resulting oil is green and peppery. In the Hacienda kitchen, we use it simply and generously to showcase its energetic freshness.
