The fruit on the Scribe Estate dedicated to sparkling production is farmed differently from the fruit destined for Estate Pinot Noir: we remove fewer leaves from the sparkling vines’ canopy which provides more shade for the fruit. The decreased sun exposure ultimately gives more purity and nuance to the wine, rather than the riper fruit characteristics the sun can bring.
The fermentation yielded a dry, complex first wine and after 10 months aging in stainless steel and neutral French oak barrels, we bottled this still wine. The second fermentation and aging in the bottle lasted a little more than two years until we disgorged these bottles in July 2024.
The process of making sparkling wine in the true champagne method is several years long, obsessively methodical and necessarily hands-on. Babysitting these bottles in the cellar through their transformation is a true labor of love, only undertaken with a deep reverence for the magical potential of a beautiful sparkling wine. We hope you open it in celebration.

Tirage occurred in April of 2022 and was aged on lees until disgorgement in July of 2024.
