MEYER LEMON * ALMOND * SEA SALT
The terroir of the Scribe Estate is defined by cooling sea breezes, bright afternoon sun, and volcanic ash-rich soil – distinctions that lead to great fruit development while also retaining the grapes’ vibrant natural acidity, excellent for sparkling wine. This wine captures the texture, energy, and power of the Scribe Estate.
The process of making sparkling wine in the true champagne method is several years long, obsessively meticulous and necessarily hands-on. The caretaking of these bottles in the cellar through their transformation is a true labor of love, only undertaken with a deep reverence for the magical potential of a beautiful sparkling wine. This wine is delicious and alive and we hope you open it in celebration.
