The Hacienda kitchen’s two most essential ingredients are grown right here on the SCRIBE Farm.

The first is Verjus – French for "green juice" – pressed from Pinot Noir harvested mid-summer, before the sugars develop. We use it in place of lemon or vinegar: a bright, gentle acidity that lifts any dish. It's the secret in our Hacienda Vinaigrette.

The second is Estate Olive Oil, made from the 5 great Tuscan varieties, cold-pressed and bottled immediately to capture the fresh, vibrant peppery notes of Olio Nuovo. In the Hacienda kitchen, we use it simply and generously to showcase its energetic freshness.
