Years ago in Tuscany, we experienced the vibrancy of fresh pressed olio nuovo, and upon our return planted the four great Tuscan varieties of olive trees (Coratina, Frantoio, Leccino, Pendolino) here on the SCRIBE farm. About 120 trees in total.
This November, after the last of the grapes were harvested, we picked and pressed and bottled our small, but precious 2020 crop. Watch the story on YouTube.
The resulting olive oil is green and floral. In the Hacienda kitchen, we use it as simply as possible and always generously to showcase its grassy freshness.
