Tasting Notes
For this bottling we were inspired by some old world vinification techniques. In an effort to extract a bit of earth, phenolic notes to balance the fruity floral characteristics inherent to the 809 Chardonnay CLone, we employed extended skin fermentation followed by a very gentle hand-pressing.
