Soil: Huichica loam. Meteorological Data 2012: An ideal growing season. No spring frosts, consistent temperatures and a warm summer set the scene for a sharp ripening curve and early harvest.
Harvest Method: By hand in small boxes.
Yield: 4 tons/acre
Grapes: 100% Pinot Noir – 75% Martini clone, 25% Pommard clone
Fermentation Process: Extended cold fermentation in stainless steel.
Aging Process: 4 months in neutral French oak barrels.
